1. Place water, premix and egg pulp in a clean mixing bowl, fitted with
a whisk mixer.
2. Blend on low speed for 1 minute and then scrape down.
3. If you wish to make chocolate super sponge, slowly add chocolate
paste as desired.
4. Whip on high speed for 6-10 minutes. A mixing time of 10 minutes
will result in a more open texture. For swiss roll, it is recommended
to mix for 6 minutes, to avoid cracking when sponge is rolled.
5. Scale off at 185g-200g for 7’’ (18cm) diameter round tin.
6. Bake for 18-22 minutes at 180°C.
